5-Minute Weeknight Dinners That Actually Taste Good
We’ve all had those nights: hungry, tired, and the fridge looks unhelpful. The trick isn’t a new recipe — it’s having three go-to dinners built from staples you already keep on hand.
1. Silky miso butter noodles
Boil noodles while you whisk together miso, a knob of butter, and a splash of the noodle water. Toss. Top with whatever green thing you have. Done in the time it takes the water to boil.
2. Crispy chickpea toast
Toast bread, smash chickpeas with olive oil, lemon, and salt, pile them on, finish with a drizzle of yogurt. Crunchy, creamy, and weirdly satisfying.
3. The 5-minute fried rice
Cold rice + an egg + frozen veg + a spoon of soy sauce. High heat, keep it moving, two minutes. Better than takeout and a tenth of the wait.
Keep these three in rotation and a busy weeknight stops being a takeout night by default.
